Abstract

In this article we described the meat consumers from Pelotas-RS. Considering the dynamics of the markets in this globalized world it has increased the importance of understanding all links of supply chains. Of course, as the main objective of supply chains is satisfying the final customers, it is every time more important to understand them. We investigated the consumption of six meats: beef, chicken, pork, fish, ship, and other (hunted and exotic). The data was profiled in relation to respondent sex, age, educational level, income, professional status and resident area. We also investigated the purchasing and consumption habits through measuring the degree of importance of certain product and place of purchasing attributes. The majority of the respondents eat meat in a daily basis, and use to buy meat every week in hiper or supermarket. Price perception changes according to the type of the meat to be chosen. Traceability is not recognized as a key factor in meat consumption for the large proportion of consumers. The most important attribute during the purchasing decision relates to the aspects of the outlet in terms of product presentation, and hygienic level of the seller and the outlet itself.
