Abstract

The present study focuses on the consumers' preferences for fine red wines, revealed by blind tasting trials. The sampling selected to take part at this trials were chosen for convenience, considering the characteristics of the consumers of fine wines. The results reveal the order of the consumers' preferences, by the four types of wines used: Cabernet Franc, Cabernet Sauvignon, Merlot e Tannat. From the choices made by the interviewees, the analysis on the influence of the attributes colour, smell, body, smoothness and flavour that influences the choice of a good wine. The characteristics that a consumer considers important in a good wine are described in the final considerations, as well as the intensity of the consumer preference by the products used.
