Abstract

Quality Function Deployment (QFD) has been widely employed to convert customers’ desires into precise product and process specifications. The features prioritized by the QFD, however, might not be successfully improved in case the required resources are not promptly available in the production system. This paper brings a detailed description of QFD steps and its integration to forecasting models in order to improve the sensorial features of a food product. The QFD reveals customers’ most valued perception features, while forecasting models adjust resources availability in order to execute the prioritized features according to product demand variations. The proposed approach led to improvement procedures based on the prioritized features.
